Pear Cake Recipe
INGREDIENTS:
2 cups sugar
1 1/2 cup butter, softened
3 eggs
3 cups flour
1 teaspoon baking soda
2 teaspoons vanilla extract
2 cups flaked coconut
3 cups canned pears -- drained & chopped
1 teaspoon cinnamon
1 teaspoon salt
PREPARATION:
Cream together sugar and butter. Add eggs,one at a time, mixing well after each addition. Set aside. Sift flour together with the cinnamon, salt and soda, then add to creamed butter mixture. Add vanilla; mix well. Add coconut and pears, stirring by hand.
Pour into greased and floured bundt pan. Bake at 325F for 1 1/2 to 2 hours, or when cake tests done when a wooden pick inserted in center comes clean. Cool on rack until cake shrinks from sides of pan; remove from pan and cool on rack.
